What music software are you using? Need to know that first. Most software has a function called midi learn, that's what you want.

It seems pretty easy for Fruity Loops - although I haven't had the chance to set any MIDI devices up because I just got a MicroKorg, but don't have an interface... I have the idea down, I think.
FL is good because you can assign pretty much any controllable parameter (any volume knob, pan knob, LFO speeds, shapes, filters, tempo - literally pretty much anything) to either an automation clip or a MIDI controller. All you have to do is right click on the control you want to uh, control, and click "Link to controller..." then in the following window, match up your channels if needed, adjust any other settings, and click accept.
Let me know if that's right because then I'll be able to do it whenever I get around to buying a MIDI interface.
